The slicing knife has a series of alternating scallops on both sides of the blade. These reduce the drag on the knife and to allow for easy separation from the knife’s blade. The result is the paper-thin slices essential for precision cooking.

The Deba knife takes inspiration from the traditional Japanese salmon knives, usually called “Deba”. Just as the traditional Japanese Debas, the edge is ground only on one side for a clean cut. The combination is perfect for slicing cured salmon, tuna steak, sushi or even vegetables or fruit, such as a lemon or a pepper. The cut is superbly clean. We love this unique knife.
